Dingle Single Pot Still whiskeys are created from hand-selected casks and married together to produce a Single Pot Still Irish Whiskey whose spirit embodies our independence and individuality.
A series of nine releases, first filled in Bourbon casks and finished in a variety of others, that celebrates both the Celtic Wheel of the Year and the Wren’s Day.
Our spirit is triple distilled, and every aspect of our process is manual from the mashing to the addition of yeast and the cutting of the heads and tails of our spirit. Our casks are hand-filled, and the whiskey is aged until we consider it ready through careful observation and sampling.
Finally, after what we believe to be the perfect amount of maturation,our casks are emptied and the whiskey is manually bottled, ensuring that every aspect of the process is hand-crafted to the highest level.
