The Celtic Wheel of the Year is a solar calendar that marks time throughout the year and its seasons. The ninth and final release of this series honours the traditional celebration of Lá an Dreoilín also know as Wren’s Day. A thriving tradition in Dingle of revelry and good-humoured mischief, which is celebrated on December 26th.
Matured in former Bourbon casks with a Muscatel cask finish, Dingle Lá an Dreoilín Single Pot Still brings aromas of sugared almonds and black cherries with dark chocolate and caramelised bananas. Hints of toasted cinnamon, honey and ginger on the palate give way to spiced almonds. A luxurious mouthfeel of creamy, warm spice and dried fruits come to the fore.

Add the Dingle Single Pot Still, lime juice and sugar syrup to a tall, chilled glass with ice.
Top with soda water and garnish with a lime wheel or lime peel to enjoy.
