At Dingle, authenticity is woven into every stage of production. Our Single Malt is matured in a marriage of Bourbon, Oloroso, and Pedro Ximénez Sherry casks—each chosen for the distinctive influence it brings. These casks are married through a Solera system, allowing past and present to flow together in harmony. The proportions drawn from each cask type are carefully balanced, ensuring consistency while still allowing individuality to shine. The journey begins in our wooden mash tun, where locally sourced malted Irish barley is brought together in the traditional way. Resting in Dingle’s coastal climate, the spirit is shaped by time and tide, resulting in a whiskey that embodies craft, character, and community—the very spirit of Dingle.
