Wheel of the year

The Celtic wheel of the Year is a solar calendar that marks the time and the seasons. it is divided into eight periods. Dingle Distilery’s wheel of the year series is set to launch eight editions. following the rhythm of the seasons. equinoxes. and solstices. plus a final release to mark wren’s Day.

The cross-quarter points are the four festivals that are marked in between the solstices and the equinoxes. these file festivals occur at the start of each season and are a time to celebrate each season. samhain – winter. Bride- spring. Bealtaine – summer. lunasa – autumn.

The final release. La an Dreoilin – Wren’s day. while not part of the celtic whell of the year. is in recognition of the importance of the day in Dingle.

Samhain Single Malt

1st release

This limited release honours the Celtic festival of Samhain. This festival of fire and feasting marks the end of bright summer days, and the beginning of the Celtic new year. Samhain Single Malt is inspired by the spirit of Samhain and its significance to our ancestors.

Matured in Bourbon casks with a Muscatel cask finish, Samhain Single Malt expresses warm floral, citrus, and cherry notes on the nose. The palate is zesty with hints of raisins, almonds, sweet spice, and raspberry, concluding with a long finish of summer fruits, pepper and cinnamon spice.

Lá le Bríde Single Malt

2nd release

This limited release honours the ancient Celtic celebration of Lá le Bríde, also known as Imbolg, which marks the beginning of spring and the arrival of brighter, warmers days. Lá le Bríde Single Malt is a tribute to the joy of spring and the celebration of life.

Matured in Bourbon casks with a Rye cask finish, Lá le Bríde Single Malt expresses light, sweet aromas of honey, raspberries, biscuits, icing sugar, and butterscotch on the nose. On the palate, it is rich in spice, herbs, caramel, and ginger, all elevated nicely with a touch of mint, and brought to a close with a toffee and spiced fruit finish.

Bealtaine Single Pot Still

3rd release

This limited release honours the ancient Celtic celebration of Bealtaine, which marks the end of spring and the beginning of summer.

Bealtaine Single Pot Still is an homage to the arrival of long summer evenings and the Bealtaine fire festival.

Matured in Bourbon casks with a Shiraz cask finish, Bealtaine Single Pot Still expresses sweet aromas of sundried raisins, sweet dates and vanilla cream on the nose.

On the palate, it is warm with a suggestion of dark cherries
in syrup, nutty caramel and velvety dark chocolate.

The syrup texture slowly melts to a warm spice finish.

Lúnasa Single Malt

4th release

This limited release honours the ancient Celtic celebration of Lúnasa, the beginning of the harvest season. Lúnasa Single Malt pays respects to the mother of Lugh, a god of Irish mythology, who is said to have died of exhaustion after preparing Ireland’s fields for farming.

Matured in Bourbon casks with a Widow Jane Bourbon cask finish, Lúnasa Single Malt expresses aromas of ripe red berries, warm salted caramel, lemon sherbet and creamy butter fudge. On the palate, it brings barley sugar with a pinch of spice and hints of dark chocolate with raspberries. Ginger and spice create a warm glow and slowly leaves dark fruits and caramel notes.

Grianstad an Gheimhridh Single Malt

1st release

This limited release honours the ancient Celtic celebration of Grianstad an Gheimhridh, the winter solstice. Grianstad translates as “the stopping of the sun”, and Dingle Grianstad an Gheimhridh Single Malt is a testament to a time of year that is all about the dark of night drawing in.

Matured in former Bourbon casks with a Tawny Port cask finish, Dingle Grianstad an Gheimhridh Single Malt expresses aromas of blackcurrant jelly, pomegranate, cinnamon toast and warm ginger on the nose. On the palate it brings suggestions of red berry fruits and dark chocolate with a sense of warm cloves and creamy soft fudge. The spice finish mellows, leaving a lingering sweetness on the tip of the tongue.

Cónocht an Earraigh Single Malt

6th release

This limited release honours the ancient celebration of Cónocht an Earraigh, the Spring Equinox, when night and day align and the energy of the earth comes into balance. This is a time of vitality and growth, when young livestock are developing and the fields that were recently fallow begin to flourish into rich pastures. At this time of year, Dingle’s rolling landscape springs into life as the farmland of the peninsula fills with a variety of crops and livestock, with hopes for a long and warm summer ahead.

At Dingle Distillery, Cónocht an Earraigh is the perfect time to sample our casks as they age, as our Master Distiller searches for just the right balance of flavours and characteristics that demonstrate exactly why the difference is Dingle.

Matured in former Bourbon casks with a Cabernet Sauvignon finish. Cónocht an Earraigh expresses aromas of ripe plums, blackberries dusted with icing sugar, toasted almonds and muscovado sugar. On the palate it brings suggestions of rich red fruits, subtle spice, gingerbread, Fruit tarte and treacle toffee. The finish leaves a lingering mouthfeel with sweet fruits balanced with dry tannins.

Grianstad an tSamhraidh Single Pot Still

7th release

This limited release honours the ancient celebration of the Summer Solstice which usually falls on the 21st of June. Grianstad an tSamhraidh is the last of the great festivals before daylight begins to dwindle; so we celebrate it enthusiastically as the crops ripen and bear fruit. At Dingle Distillery, there’s nothing we enjoy more than a long summer evening spent with friends and family, and a dram or two!

Matured in first-fill Bourbon casks before a long finish in Rye casks. Grianstad an tSamhraidh expresses fresh cut hay, lemon sherbert, creamy toffee and freshly ground pepper on the nose. The palate has herbal spice, toasted vanilla, honey, spiced pecans and lemon drops. With a finish of spice with hints of liquorice and pepper.
