Pumpkin spice syrup

Take 250g of raw pumpkin, chop into small pieces and roast in an oven at 180 degrees for 30 minutes or until soft. Transfer to a saucepan along with 250g of demerara sugar and 250ml of water. Add 1tsp each cinnamon, nutmeg and allspice. Bring to a gentle boil and simmer on low for 15 minutes. Allow to chill and refrigerate.
