Sour Púca
50ml Dingle Single Malt • 25ml Lemon juice • 15ml Date syrup • egg whites • 2 dashes plum bitters
Combine all ingredients in a cocktail shaker. Shake without ice for about 10-15 seconds, then add ice and shake until chilled. Pour into a rocks glass over ice and garnish with a lemon twist.
Date Syrup Combine 150g of pitted dates with 150g of brown sugar and 200ml of water. Bring to a boil and simmer for 15 minutes. Allow to chill and refrigerate.
